Limes give up their green reluctantly. These keep it. Thin as a coin, faintly bitter where the rind meets the flesh, still smelling of the moment they were cut.
For rum, obviously. Also for the drinks that skip the rum, the bowl of something spiced, the pitcher sweating on a table nobody is in a hurry to leave.
The green stays. That is the whole trick.

The questions we get
Can you eat it?
Yes. It is fruit and nothing else, so it is food in the ordinary sense. Most people leave the wheel on the glass and never think about it again, which is also fine. It is there to be looked at and smelled as much as eaten.
Does it go soft in the drink?
Slowly. Over the course of a drink it takes on a little of what it is sitting in and softens at the edge. It does not fall apart, cloud the glass, or leave anything behind.
What is in it?
Citrus. That is the whole ingredient list. Nothing added, nothing sprayed on to hold the color.
How long does it keep?
Sealed, months rather than hours. Once you open it, keep the lid on and keep it dry and it will hold for a long while. Somewhere cool and out of direct sun is ideal.
Where do you ship?

It started with cocktails. It did not stay there.
Cocktails and the drinks that skip the alcohol. The aroma lifts before the first sip.
Between the cheese and the cured things, adding color to a board that is otherwise beige. Still crisp when it is cleared.
